Butter means flavor! The choice of butter is crucial to make delicious viennoiseries. European butter has a higher fat content than American butter which is the reason it’s so hard to make French pastries in America. I source all my butter from Wüthrich which contains 83 percent fat, rBST-Free and non GMO project certified, by Grassland to ensure you get the very best, authentic tasting treats from my ‘Petit Four’.
